Ahmet Dede was born & raised in Ankara; his mother’s food was the real catalyst for his love of cooking & Turkish cuisine. At 25 he moved to Ireland to study Culinary Arts & cut his teeth in some of Ireland’s best restaurants, working in Chapter One, Restaurant Patrick Guilbaud & The Greenhouse. He also spent time at Moshik’s Place** (now closed -Amsterdam) & Maemo** (Oslo).
Returning to Ireland in 2017, Ahmet became Head Chef of The Mew’s Restaurant, Baltimore, West Cork. Here he was crowned “The Wild Chef”, using only hyper-seasonal local produce, olive oil & black pepper were off the table. Even with this challenge, Ahmet achieved his first Michelin Star in 2018 retaining it in 2019 before the owners decided to close.
In 2020 Ahmet opened, Dede at The Customs House, awarded one Michelin star in its opening year. After 18 months Dede was awarded Two Michelin Stars. Using the best of local Irish fair & a larder brimming with spices from his homeland, a new wave of modern Turkish spiced-based cooking has emerged in Baltimore.
