Bo Bech

Bo Bech came to prominence in 2004, as the chef at Copenhagen’s Restaurant Paustian.

Then in 2009, Bech opened a tiny bakery. There, he sold only one kind of bread, in only one kind of shape, for only one price, until it ran out.

In 2011, Bech opened Restaurant Geist, his current project, where his menu includes items like baked celeriac with condensed buttermilk, quail with chanterelles and chili, and salted and dried young duck breast.
