Brid Torrades recognised the wealth of Irish food & culinary experience before most & has been protecting & promoting it for over 40 years. Through her involvement with Euro-Toques over a 23-year period, establishing the Euro-Toques Food Award with Myrtle Allen & others, she has defended artisan food practices & natural food resources at a European level, as well as promoting & participating in food education initiatives. Her career as a chef has spanned five decades. She has also taught cookery & culinary nutrition at all levels. Her great belief in the quality & freshness of Irish ingredients & determination to source them from farms, as locally as possible, influences everything she does; the philosophy behind Ósta Café & Wine Bar in Sligo. Brid graduated with an MSc in Applied Culinary Nutrition (2017) & is further pursuing her interest in food production with an MSc in Organic Farming. In recent years, Brid started farming a herd of Dexter Cattle, & is converting her mother’s family farm in Co Cavan to Organic status.
