Building a restaurant from the soil up #fote2023

Dan Cox is Chef Owner of Crocadon in St Mellion, Southeast Cornwall, located on a 120-acre    organic farm. Having studied at Westminster Kingsway, Dan continued his classical training under Roger Naylor (protege of Albert Roux at Le Gavroche), eventually winning the Roux scholarship in 2008. This led him to stage at Santi Santamaria in Can Fabes, Barcelona, before joining the opening team of Roux at Parliament Square. 

Inspired by his connection with nature, Dan spent a year at Number 14 in Verbier, Switzerland before moving to the Lake District in 2010 to join the Simon Rogan Group, first as a researcher for Aulis, and then as a technical director of Our Farm in Cartmel. Eventually he took a position at Rogan’s Fera residency within Claridges. 

After five years in the making, Dan debuted Crocadon, a farm and restaurant concept that was awarded a Green Michelin star within three months of opening in 2023.
