Chef Ebru, 2023 Basque Culinary World Prize (BCWP) winner recognized for her remarkable contributions to social gastronomy. Chef Baybara Demir has been acknowledged for innovative solutions to societal challenges especially the socioeconomic repercussions of the migrant crisis, combating the impact of climate change on soil rejuvenation, & promoting local development through the perspective of gastronomy.
She moved to Mardin in 1999 & established the first touristic restaurant in the city. Chef Baybara Demir has been working on the revival of Sorgül, Mesopotamia’s oldest wheat & she carries out the Biodegradable Waste Project, a regenerative agriculture project that includes improving the soil, supporting the farmer & contributing to the production of healthy food by transform the biodegradable food waste consisting into compost.
She featured on HBO Max “12 Zero-Waste Chefs of the World”. Ebru Baybara Demir received the Aenne Burda Creative Leadership Award (DLD Munich Conference) & grand prix at the Mediterranean Tourism Forum from President of Malta Dr. George Vella.
