‘Palestinian cuisine, Nafas and Stories of the land’         

Franco-Palestinian chef, hotelier & author, Fadi Kattan has become the voice of modern Palestinian cuisine.? His Fawda Restaurant was located just off Bethlehem’s historic pilgrimage route.  Born & raised in Bethlehem, on his mother’s side a Francophone culture &?his father’s side natives of Bethlehem’s Old City but spent passages in India, Japan & Sudan. After completing hotel management studies, work in Paris & London, Fadi came back to Palestine to join his family’s business.? However, his love for the kitchen never went away & 15 years later, despite the challenging political & economic situation, he opened his restaurant.

During the pandemic, the restaurant closed & Fadi used the time to create a podcast sharing Palestinian Traditional Recipes & interviewing guests such as Massimo Bottura & Sami Tamimi. Fadi is co-founder & chef at Akub, the first Modern Palestinian restaurant in London. May, 2024, Fadi published his first solo cookbook, Bethlehem: a celebration of Palestinian food. Fadi is preparing to launch another venture, Louf, in Toronto, bringing his interpretation of Palestinian flavours to the culinary capital of Canada.
