Joris Bijdendijk is executive chef of Michelin-starred restaurants RIJKS & Wils, and Wils Bakery Café (Bib Gourmand. He is columnist for newspaper ‘Het Parool’, author of several books and SVH certified Master chef. Bijdendijks passion for beautiful products and good food started at a young age. Every weekend the Bijdendijk family would go to the Belgian Ardennes, where they would tend to their farm and substantial vegetable garden.
At 19 years old, he started working in the kitchen of Ron Blaauw Restaurant** and followed onto Michelin star restaurant Le Jardin des Sens** in Montpellier. At the end of 2014 Joris started as Executive Chef at RIJKS, the restaurant of the Rijks museum. He is co-founder of Low Food, a movement that has set the goal to change Dutch gastronomy. To make Dutch food culture leading when it comes to forward thinking on subjects such as sustainability and inclusion.
