PANEL DISCUSSION: The Future of Canadian Food [ Monday: 10.45am ]
Justin Leboe (@justin_leboe) is the only chef to have landed on enRoute Magazine’s Best New Restaurants list in each of the top three spots, for Rush (2009), Model Milk (2012) and taking the top spot (2015) as chef/owner of Pigeonhole, championed for its innovative “genre-bending” menu, kitchen and brigade design. He was also Named Canada’s Most Innovative Chef (Globe and Mail 2016 Canada’s 100 Best).
Drawn to cooking from a young age, Leboe rejected the normal route of white hats and student loans, instead working his way up, finding mentors in celebrated chefs and work terms in prestigious kitchens across the world.
Today, Leboe’s commitment to the road less traveled continues as he challenges conventions. Asked what’s next he’s tight-lipped, but it sure won’t involve jumping on any bandwagons.
