Food on the Edge is thrilled to welcome to Galway in October the inimitable Mads Refslund (@MadsRefslund). The Nordic star chef from Copenhagen was co-founder of the Worlds Best Restaurant NOMA where he was head chef along with René Redzepi, before introducing New Nordic Cuisine to the US, rapidly receiving great praise for his unique creativity and almost supernatural way of thinking about food. He also founded the Michelin-awarded restaurant MR, and has received numerous awards for his food. He is currently the Consulting Executive Chef at Manhattan eatery ACME.
