Born on a dairy farm in Dublin, Margaret Leahy developed a deep connection to farming & food from an early age. Her love for the land & sustainable farming led her to Mayo, where she & her late husband established a thriving organic farm, raising sheep & suckler cattle alongside cultivating vegetables. Margaret’s innovative spirit saw her set up one of the first box delivery systems, bringing fresh, organic meat & vegetables directly to consumers.
She served as Chairperson of the Irish Organic Farmers & Growers Association (now IOA) & was also a member of the Food Safety Authority Consultative Council advocating for small food producers & farmers. Her innovative community based social enterprise, which sought to ensure those on low incomes could access locally grown, organic produce, saw her receive an Arthur Guinness Social Entrepreneur Award.
Today, Margaret combines her passion for food & our rural communities in Fable Tours, introducing guests to farmers, fishers, food producers and chefs who share their stories and wonderful food.
