Originally from Leigh-on-sea, Essex, Mark trained at Westminster Kingsway College. After graduating in 2007, he took up his first professional cooking role with Marcus Wareing, at what was then the 2 Michelin-starred Pétrus. He moved his way around the kitchen, and within three years, worked his way up to sous chef. By 2012, at the young age of 27, Mark became Head Chef. In 2016 Mark took part in the BBC show, Great British Menu. His main course scored perfect 10s from the judges, which saw him cook the coveted ‘MainCourse’ dish at the banquet at Westminster Palace. February 2017 marked a huge new chapter for Mark, as he and his now wife Shauna, entered into a partnership with Marcus, becoming joint chef patrons at his eponymous restaurant now known as ‘Marcus.’ Along with Marcus, they pushed the restaurant forward, evolving and building up on a more relaxed approach to fine dining. In February 2022, Mark and Shauna with their young family, made the exciting decision to move to Shauna’s home city, Derry, and are currently working on a new restaurant space.
