Mike Tweedie

Michael Tweedie joined Adare Manor in June of 2017 overseeing the creation of the new fine-dining
menus for The Oak Room. Michael’s passion for food & fine ingredients and the excellence &
originality of his dishes have been the driving force throughout career. His talent
& commitment have been recognised in several highly prestigious awards & competitions.

Michael honed his skills at the five-star Ballyfin Demesne where as head chef, the hotel restaurant won two AA Rosettes within eight weeks of opening. Previously, Michael worked across England, including at  two-Michelin-Starred Gidleigh Park Hotel under Michael Caines & Michelin-Starred Lucknam Park Hotel under Hwyel Jones.

Awarded its first Michelin star in 2019, The Oak Room restaurant at Adare Manor offers guests an
unforgettable candlelit fine-dining experience in the heart of the hotel. The seasonal menus
developed by Michael & his team feature the very best in contemporary Irish dining, with a strong
focus on local produce & ingredients from small suppliers around the island.
