Michael van der Kroft has a low-key style, where his dishes look extremely simple at first glance but it’s the intricate layers of flavour that sets his dishes apart. He’s a self-taught man who didn’t finish any formal schooling when it comes to cooking. His passion was the driving force that took him to where he is now. Michael is the chef and co-owner of Tres, a 12-seat restaurant in Rotterdam in one of the oldest buildings in the city. He solely works with Dutch ingredients to demonstrate what can be grown, harvested, fished and foraged from this small but mighty country.”
