Chef/Patron Michael Wilson has made his mark on the Singapore culinary scene, joining forces with renowned hospitality group Unlisted Collection to develop and run Michelin star Marguerite, artisanal gelateria Mylo’s & Mediterranean restaurant Hortus.
Born in Melbourne, Michael worked with Guy Grossi & Cutler & Co before moving to Shanghai where he earned his first Michelin Star, 5 months after opening Phénix. In similar timely fashion, Marguerite was awarded a Michelin Star in July 2022, 8 months after launching.
Michael is exceptionally proud to provide a platform for a new generation of culinary talent & a firm believer that the mark of success is derived from a commitment to the craft & drive to innovate & elevate. Michael’s focus on produce & in showcasing the best of each ingredient he works with champions the provenance & the seasons.
