Pádraic, chef, restaurateur and craft brewer was born and bred on Boxty, a Leitrim staple. Leaving Leitrim in 1979 he travelled Europe, the West Indies and Americas, he returned to Dublin in the late 80’s to open the iconic Irish Restaurant, Gallagher’s Boxty House in Temple Bar.
Pádraic Óg, BA(Hons) in Culinary Arts is a published author having co written papers on the Potato in Irish Cuisine and Culture and a history of Corned Beef in Ireland. He is a Fáilte Ireland Food Champion, works with Bord Bia and tirelessly promotes Irish artisan producers both in Ireland and abroad. He owns Jack Smyth Stouts & Ales, Tallaght’s first craft brewery. He grows and collects heritage potatoes and was awarded Local Food Hero at the restaurant awards. Pádraic Óg is a past president of the Restaurants Association of Ireland. After 30 years he is finally writing the Boxty House Cookery Book.
