‘Merroir – The Oyster & a Sense of Place’

Toronto born, Patrick McMurray has been Shuckin’ around the restaurant trade for over 30 years.  After graduating B.Kinesiology, Patrick worked at Rodney’s Oyster House for 8 years, refining his craft & understanding Merroir. Patrick’s restaurants have included Starfish Oyster Bed & Grill and The Céilí Cottage. Patrick was crowned World Oyster Opening Champion, Galway 2002 & held Guinness world records for opening 39 oysters in 60 seconds as well as Canadian team & individual for oyster opening in an hour.  

The Oyster Companion – Patrick’s “Field Guide” (2007) was written about the world of oysters from the Shucker’s perspective, he’s a member of The Oyster Master Guild – an online education & certification platform for teaching the Art of Oystering to Shuckers & soon to be Oyster Sommeliers and he is a Professor at Centennial College (Hospitality, Tourism, & Culinary Arts). Patrick has created his own line of Professional Oyster Knives & accessories. ShuckerPaddy is now traveling the world, hosting Oyster Festivals & consulting for Restaurants.
