Paul Carroll

Paul dropped out of school aged 16 after his Junior Certificate, he was rejected by seven hotels and restaurants before Michael Martin took him on at The Tea Rooms in the Clarence Hotel. After 3 ½ years he moved to London to work in Petrus as a commis for Marcus Wareing, here he met Gordon Ramsey. He went to work at Royal Hospital Road for Gordon starting as Junior Sous Chef and leaving as Sous Chef.
He spent some time in Jersey at Longueville manor before returning to Ireland to open the Village at Lyons in Kildare. After a year he moved on to open Gordon Ramsay at The Ritz Carlton. Paul had itchy feet and spent short stints in the Middle East and Caribbean before joining Celebrity Cruises. He met his wife on board and they now run restaurant ‘Polly’ in the city of Vladimir, Russia.
