Paul’s mantra is Food as a Tool for Change. The creation of the Screaming Avocado Canteen began an exploration of food for his students and many others. The student run alternative eatery challenged school food norms and began a movement of chefs returning to ‘school’ to teach skills and empower youth to better the food they eat. The Screaming Avocado lead to the EatFit Project, a youth lead not-for-profit focused on improving the nutritional and mental well-being in isolated First Nation and Inuit communities.
The Screaming Avocado gang appeared in Fink, a Food Network series. They’ve presented at Terra Madre, prepared an Arctic dinner at James Beard House, explored food internationally, dined on walrus, seal, whale and other raw treats and cooked for Prince William and Kate on their Royal tour to Canada.
The Screaming Avocado / Eatfit Project youth are cross-generational tools of change – Paul nudges them along the journey.
