Paul Smith


Paul Smith is a chef & food educator with almost 35 years experience. He is passionate about the use of Irish and local ingredients & has been actively championing Irish producers & recipes throughout his career, working in Germany, France, New York & Ireland. As chef /owner of The Mystic Celt, Paul was renowned for showcasing local ingredients at locations in Dingle & Wicklow. 

Paul followed his interest in food culture & food history by pursuing an MA in Gastronomy & Food Studies ( TU Dublin). He focused his research on culinary education for children & has dedicated many years to promoting & highlighting the importance of food literacy. Paul continues to work in culinary education especially with marginalised groups; and in private cookery classes & secondary schools & also offers HACCP  & Food Business Management training.

Paul is co-ordinator for Wicklow Naturally, Wicklow’s Food and Drinks Network, his work has ensured that his native County Wicklow is now finding itself as one of the leading food destinations in Ireland.
