She handles each batch of grapes individually and uses as little intervention as possible, her aim is to make elegant wines that express the character of the vineyard and the vintage they come from. Róisín divides her time between Burgundy and her beloved County Mayo in the west of Ireland where she works as a pharmacist in the family business
