He has presented at a number of events focusing on a range of topics, from changing kitchen culture to data driven initiatives focusing on everything from food waste to how corona virus impacted the restaurant industry.
More unusual culinary adventures include participating in Sardinia’s bluefin Mattanza, travelling to the driest place on earth to forage for new ingredients, eating bacteria at 4000 metres in the Andes and consuming a three-star meal at altitude.
