From Derry, Shauna comes from a family of restaurateurs. After moving to England in 2004, a student placement at the then Pétrus she met Chef Patron, Marcus Wareing. Upon finishing University in 2008, Shauna worked at Marcus Wareing at The Berkeley before transferring to The Gilbert Scott to help with its launch in 2011; transferring her multi-disciplinary talents to the operational side of Marcus Wareing Restaurant. In 2012 Shauna moved back to Marcus Wareing at The Berkeley where she was Senior Sous Chef to Head Chef Mark Froydenlund. Together Mark and Shauna were part of the team which saw the restaurant relaunch as Marcus – to critical acclaim. Shauna took a temporary acting head chef position in the newly launched Tredwells in 2015, was a consultant alongside Marcus for the movie ‘Burnt’ and in 2016 she took a one-year teaching position.
Originally from Essex, Mark’s raw talent was recognised at college. Marcus Wareing offered him his first job at the then Pétrus in 2007. He was part of the team which saw a change of ownership and name, to Marcus Wareing at The Berkeley giving Mark invaluable insight into business, loyalty and how to capitalise on change and start afresh. Within three years Mark worked up to sous chef. From early on Mark (& Shauna) developed a strong & close working relationship with Marcus, working all hours, developing menus, trying, testing, tasting, repeatedly until they had found the perfect combinations, flavours & presentation. In 2012, at 27, Mark became Head Chef. In 2014 he was once again a key player in the team which saw the restaurant undergo another reinvention, relaunching as Marcus; retaining the two Michelin stars. In 2016 Mark cooked the main course in BBC’s Great British Menu Banquet.
February 2017 marked a new chapter for Shauna & Mark going into partnership with Marcus Wareing, as joint chef patrons at his two Michelin starred restaurant, Marcus.
