Siobhán, an ex-primary school teacher, has led her small but dedicated team at St.Tola Goat farm since 1999.
She has brought St.Tola from a tiny artisan business to an internationally recognised, award-winning, brand. Sustainability is at the core of her philosophy, protecting her small family farm for the long-term benefit of all those creatures that live on it & live off it. Her sense of place & its culture is true to all that she does in not just creating a truly artisan cheese but also the importance of sense of place & community. She is a strong advocate for promoting Irish Food Culture both domestically & internationally. She is an advocate for protecting raw milk cheeses & works with the Irish Raw Milk Presidia. She works alongside fellow members of the following networks, The Burren Eco-Tourism Network, CAIS -The Irish Cheesemakers Association ,GeoFood Global ,Economusée International, Euro Toques Ireland, Slow Food International.
She has been selected as a Top 50 Heroine in the Irish Food Scene & a Top 50 Producer Making Ireland A Better Place.
