
Theo Clench is head chef at Cycene, the restaurant located within James and Christie Brown’s Blue Mountain School in Shoreditch, and was awarded a Michelin star only five months after opening. Theo trained in Brighton before moving to London and worked in a host of Michelin-starred restaurants including Clove Cl, Trinity and Portland, where he held the position of head chef. In 2020, Theo took the position of head chef at Akoko, Fitzrovia’s West African restaurant which is where he learnt how to extract optimum flavour from simple ingredients.
Theo’s travels around Australasia and East Asia have informed the menu at Cycene, which means kitchen in Old English. Dishes on Theo’s menu, which are predominantly seafood led, are adapted regularly and continuously evolve whilst using ingredients at their peak.
