Will Horowitz (@will_horowitz), is the executive chef & owner of the well awarded Ducks Eatery restaurant and Harry & Ida’s meat and supply co. in the East Village of NYC. He specializes in practicing heritage techniques with a strong focus on smoked, cured & fermented foods. His New York culinary roots run deep, as grandparents on both sides were restaurant professionals: one a French-trained chef cooking seasonally in Orient point on the tip of Long Island, the other running a traditional Jewish Delicatessen in Harlem.
Will attended Naropa University in Boulder, Colorado for Tibetan Buddhism & eco-sustainability. Where he spent extensive time studying off-the-grid living, permaculture and primitive survival. Since then, Will has studied and cooked cuisines throughout the United States, Central America, Nepal, and Southeast Asia. A big believer of using the local terroir & history as inspiration, he is an avid forager, fisherman and naturalist.
